Chocolate Oatmeal

- 75g Butter
- 20g Vegetable cream
- 150g Salted cashews
- 100g Sliced almonds
- 200g Coconut sugar
- 100g Salted peanuts
- 100g Honey
- 1 tsp Ceylon cinnamon
- 200g White chocolate
- 4 tbsp Goji berries
Florentines with Cashews and Dried Fruits

Method:
- Chop the cashews.
- In a pot, melt butter; add vegetable cream, sugar, honey, and cinnamon. Cook on high heat, stirring continuously with a whisk until golden.
- Remove the pot from heat, add the dried fruits, mix well, and return it to the fire. Keep stirring gradually, especially at the edges. Continue baking for 5-10 minutes.
- Grease a 40cm x 25cm baking dish with parchment paper and pour the mixture inside. Use a spatula to spread it evenly.
- Bake in a preheated oven at 180°C in the middle rack for about 20-25 minutes or until golden brown.
- Once out of the oven, let it cool. Just before it cools completely and while it’s still warm, shape it as desired.
- Melt white chocolate in a double boiler and dip the florentines inside.
- Garnish with goji berries.
- Store and keep refrigerated.
